
Cuban-Style Carne Asada Stew
Carne Asada in a sofrito-based stew with red bell peppers, capers, and olives. Serve with steamed rice and black beans to complete the meal.

Ingredients
- 2 each Meati™ Carne Asada, thawed
- 1 ½ TBSP olive oil
- ½ onion, sliced thin
- 4 cloves garlic, crushed
- ½ red bell pepper, sliced thin
- ¾ c prepared sofrito
- 1 – 14 ounce can of diced tomatoes
- ¾ c vegetable stock
- 2 TBSP capers
- 1 bay leaf
- ¼ c olives with pimentos, sliced or whole
Directions
- Heat oil in a medium pot and cook onions and garlic until translucent. Add red bell pepper and cook for a few minutes.
- Add sofrito, diced tomatoes, vegetable stock, capers, and bay leaf. Simmer for 20-25 minutes until flavors have melded.
- Add Carne Asada filets into the pot and submerge. Let simmer for no longer than 5 minutes or until the filets shred apart easily.
- Shred the Carne Asada in the pot and add the olives.
- Serve immediately.
