Cuban-Style Carne Asada Stew

Carne Asada in a sofrito-based stew with red bell peppers, capers, and olives. Serve with steamed rice and black beans to complete the meal.

Ingredients 

  • 2 each Meati™ Carne Asada, thawed
  • 1 ½ TBSP olive oil
  • ½ onion, sliced thin
  • 4 cloves garlic, crushed
  • ½ red bell pepper, sliced thin
  • ¾ c prepared sofrito
  • 1 – 14 ounce can of diced tomatoes
  • ¾ c vegetable stock
  • 2 TBSP capers
  • 1 bay leaf
  • ¼ c olives with pimentos, sliced or whole

Directions

  1. Heat oil in a medium pot and cook onions and garlic until translucent. Add red bell pepper and cook for a few minutes.
  2. Add sofrito, diced tomatoes, vegetable stock, capers, and bay leaf. Simmer for 20-25 minutes until flavors have melded.
  3. Add Carne Asada filets into the pot and submerge. Let simmer for no longer than 5 minutes or until the filets shred apart easily.
  4. Shred the Carne Asada in the pot and add the olives.
  5. Serve immediately.
