Pesto Caprese Meati™ Cutlet Sandwiches

This sandwich is a twist on the classic caprese salad. The Meati™ Classic Cutlet is brushed with fresh pesto then grilled and finished with lemon juice. It’s then sliced and served on buttered and grilled ciabatta with a layer of fresh greens, ripe summer tomatoes, buffalo mozzarella, basil and fruity olive oil. The pesto serves double duty as a marinade for the cutlet and the aioli for the sandwich. Time saving tips: Prepared pesto from the grocery store works well here.

For the Pesto & Aioli

(makes 2 cups)

  • ¾ c toasted pine nuts
  • 1 tsp garlic, minced
  • ½ tsp crushed red pepper flakes
  • 2 ½ oz parmesan cheese, grated
  • 2 c loosely packed fresh basil leaves, torn
  • ¾ c extra virgin olive oil
  • 1 Tbsp lemon juice
  • ½ Tbsp Kosher salt
  • 1 c mayonnaise
  1. In a small blender pulse the pine nuts, garlic, red pepper flakes and parmesan cheese until everything is minced together.
  2. Add the basil and pulse 3-4 times. Continue doing so while streaming the olive oil into the blender and stop when all the ingredients have been combined.
  3. Season with lemon juice and salt to taste. Keep refrigerated.
  4. For the pesto aioli: Add 1 cup of the prepared pesto to 1 cup of mayonnaise and mix until well-incorporated. Keep refrigerated.

For the Pesto Grilled Meati™ Classic Cutlet & Ciabatta Sandwiches

  • 4 Meati™ Classic Cutlets, thawed.
  • Kosher salt, as needed
  • Ground black pepper, as needed
  • Extra virgin olive oil, as needed
  • 1 c prepared pesto
  • 4 ciabatta rolls, cut lengthwise
  • 2 Tbsp unsalted butter
  • 1 c pesto aioli
  • 2 cups mixed greens
  • 2 large beefsteak tomatoes, sliced
  • 8 buffalo mozzarella slices
  • Fresh basil leaves
  1. Heat grill to medium and oil grill grate.
  2. Pat dry the Meati™ chicken cutlets and season with salt, pepper and a small amount of oil.
  3. Brush cutlets with pesto on both sides.
  4. Grill for 4 minutes on each side or until the cutlets have reached an internal temperature of 165°F. Let rest for 1 minute then slice the cutlets for the sandwiches. Set aside.
  5. Butter ciabatta rolls and grill cut side down until soft and toasted, about 4 minutes

For Assembly

Layer the sandwich from the bottom up with a good smear of the pesto aioli, a thin layer of mixed greens, sliced tomatoes, sliced mozzarella, slices of the grilled Meati™ cutlets, and some fresh basil leaves.
