Classic Cutlet Stir Fry

Ingredients
- 2 Meati™ Classic Cutlets
- 1/4 c olive oil for stir-frying
- 1/2 head of broccoli, cut into florets
- 2 ea carrots cut into 1/8 inch thick coins
- 1/2 c red bell pepper, cut into medium diced
- 2 ea stalks of green onion, diced
- 1 ea clove of garlic, minced
- 3/4 c Teriyaki sauce
- 2 c cauliflower rice, cooked according to package directions
Directions
- Clean and chop broccoli into small florets.
- To a large skillet over medium-high heat, warm 2 tablespoons olive oil. Add the Classic Cutlets to the pan and cook until internal temperature reaches 165°F, 7-8 minutes. Set aside to rest for 2 minutes, then dice into 1-inch cubes. Set aside.
- Place pan back on medium-high heat and warm the remaining tablespoon of oil.
- Add carrots, broccoli florets, bell pepper, the white parts of the scallions, and garlic. Once fragrant and the bell pepper slices are tender, add the cooked Classic Cutlet pieces, broccoli, and teriyaki sauce.
- Stir gently until the sauce becomes sticky and thoroughly coat the chicken stir fry.
- Serve on a bed of riced cauliflower and garnish with the green part of the scallions.
